Foods that are left out in room temperature for more than an hour can begin bacteria growth. Our stomach acids can kill some of these bacterias but not all and some can make you very sick. Keep foods OUT of the danger zone- Above 45 degrees and Below 145 degrees. Between these temperatures bacteria lives and breeds on our foods.

More informationActually, commercially prepared mayonnaise should be safe if left out overnight - as long as nothing else was mixed in with it. Keeping mayo refrigerated is for quality, not food safety. See Related Links.

If the mayo was homemade, then that's a different story.

Commercially-prepared mayonnaise itself generally has a pH that would be considered shelf stable and would not support pathogen growth. Label state to "refrigerate after opening" to protect flavor, extend quality and slow rancidity. If you keep it out, the flavor will degrade, so get it into refrigeration as soon as possible. If you have containers of mayo at an event, you might want to provide an ice bucket to keep the mayo cold.

At home, I like to refrigerate even unopened mayo because I don't use it up quickly.

There is no definite time since it depends on the temperature. But the FDA says that two hours left out at room temperature is the best rule of thumb for anything that should be kept cold.
