As long as the packaging is intact and the mix itself doesn't get wet, what could really go wrong with it? Some ingredients may break down over time, affecting the taste/color, but other than that... Still, jello and instant pudding are really, really cheap, so just go buy a new box if it's more than just a little bit past its sell-by date.
Eating Jell-O after its expiry date is unlikely to cause you harm however the taste, flavour and possibly texture may have deteriorated. However, if it was properly stored then this should not have occured.

You shouldn't eat Jello pudding after the expiration date because I ate it once after the expiration date and was very sick and crying like a baby!
Yes you can eat them, they are just not guaranteed to be at there best taste or "fresh." If you wait to long though they will go bad. I would say a week after the exp date wont be harmful.
