If your refrigerator is kept shut and only opened briefly to retrieve items and remains below 41 degrees you can store it for up to 7 days. If spoilage occurs after the second day, send it to the bin, food is not bound by time. Temperature, Acidity, Moisture, Time and Oxygen all play important roles in bacterial growth.

However, if your house is like mine, I imagine that your refrigerator door may get left open for up to a couple of minutes at a time. If this is the case, or your refrigerator or food does not maintain 41 degrees or less you should chuck it after 3 days. But again as I said, refrigeration is only one element to food spoilage.

Foods that are left out in room temperature for more than an hour can begin bacteria growth. Our stomach acids can kill some of these bacterias but not all and some can make you very sick. Keep foods OUT of the danger zone- between 135°F and 41°F. Between these temperatures bacteria lives and breed on our foods.

UNCOOKED In a fridge

Joints of beef , pork and lamb 3 days

Steaks 2 days

Chops 2 days

Chicken whole or portions 2 days

Bacon rashers 7 days

Cubed meat 1 day

Minced meat 1 day

Liver, heart and kidneys 1 day

Sausages 3 days

COOKED In a fridge

Joints 2 days

Chicken 2 days

Chicken, stuffed 2 days

Casseroles 2 days

Ham 2 days

Meat pies 1 day

Sliced meat 2 days

Paté 2 days

Sausages 3 days

Minnesota food code states that prepared food is only to be left out for Four (4) hours after preparation is completed. I do believe that this may change from state to state.
