It absorbs the water even when it has been cut up too, called Capillary action try experimenting it with several celery plants ,red or blue food coloring two measuring cups and leave it overnight the next day, check your experiment and make a Cross section to see the red or blue food color dye especially peeling the skin !

Well, the water flows like in any other plant. It is absorbed by the roots, then transported through the xylem to the rest of the plant. You can see this by putting celery ( with the leaves) in colored water. The bottom and leaves will change to the color of water.

Yes. it can. you might think it's impossible, but its true. try a experiment. take a celery, pluck off its leaves, put the part where the leaves are into a beaker of coloured water (use dark coloured colouring if possible.) , after that, leave it there for a few days, than observe... ... the celery absorbs water from the opposite end! its truly amazing.

If you put the roots of celery in diluted food dye, it will eventually turn the colour of the food dye, in about 1-3 days
