The only way is to keep the cat indoors. Rest assured that it is highly unlikely that the cat will ever catch a hummingbird. They are the most quickest bird and very wary.
Not true. My cat has now eaten 4 hummingbirds in the last week. She ate 5 last summer so her skill is improving. She sits very still and the hummingbirds come closer and closer. They don't seem to be wary when she's around.

Just putting the cat near the dog, except put something between then like, putting the cat in a cat cage and the dog near it. Until they get better with each other and the dog wont chase it. If its a wild cat or just a cat that come in your yard, there's really nothing you can do, just keep the dog away.
