The number before the word cousin has to do with how many generations back you and that person have a common ancestor. A first cousin is someone who shares a common grandparent, but not a common parent. A second cousin is someone who shares a common great grandparent, but not a common grandparent or parent. A third cousin is someone who shares a common great great grandparent, but not a common great grandparent, grandparent or parent. And it goes on like that.
The second part to determining how to term a cousin is the generational gap, which is referred to as (so many times) removed. Once removed means one generational gap, twice removed means two generational gaps etc. So your first cousin's daughter would be your first cousin, once removed. First cousin because your common ancestor is your grandfather, and once removed because there is one generational gap between you.

Asking about your second cousin's cousin's cousin is asking about a complex but poorly defined relationship. Are the cousins of the second cousin his first cousin, second cousin, fifth cousin twice removed, or something else. It is likely that a cousin's cousin's cousin is not related to you at all. It is also possible that your second cousin's first cousin's first cousin is also your second cousin.
The grandchild of your grandmother's first cousin is your third cousin. The grandchild of your grandmother's second cousin is your fourth cousin. The grandchild of your grandmother's third cousin is your fifth cousin.
First, second, third, fourth and fifth.
Your father's first cousin's child is your second cousin. Your father's second cousin's child is your third cousin. Your father's third cousin's child is your fourth cousin. and so on.
Second, third, fourth, fifth, sixth and so on.
