If you don't have an exact answer don't give your potential employers one. Simply answer with the truth. For example: "There are many things in my life that I value such as my family, my career, and friends. I could not chose just one moment in my life that I felt was my greatest achievement because every component in my life is important to me." However, if there is a time that you felt WAS your greatest achievement answer with that. Such as: "My servitude in the military was the greatest achievement in my life because it taught me what was truly important in life: patriotism, loyalty, and integrity. Always remember, the people who are interviewing you are human too. Don't give them a cliched answer that does not represent you or something that you think that they would like to hear.
Questions like this by an interviewer have very little to do with the achievement itself.
What the person is looking for is what type of person they are talking to and whether or not they are able to "think on their feet." Don't over think it. Take a moment to reflect and then answer honestly.
This would greatly depend on your experiences. Don't be afraid to surprise them. Your greatest achievement may be settling down with a family, and being happy with who you are. It could be completing a college course against the odds.
You do need to think these sorts of questions through before you go to an interview as they are very common. There are also some that you are unable to prepare for, but remain confident and try to be yourself as much as possible.
