Assuming it's a US model, (automatic transmission only), you would start under the car at the rear of the trans where you can follow the cable going into a collar. There is a nut that squeezes the collar to lock the cable housing to the trans. Loosen the collar nut, ( remove the bolt, the cable end will not come out otherwise). Use a large screwdriver to gently open the collar at the outside and then pull out the cable. Sometimes it's a good tug.
Leave the old cable hanging for now.
(HINT: Running a string through the route up to the engine compartment will also help you to follow it when installing the new cable).
At the speedometer end, you remove the bottom dash panel, (right above your knees when driving) and reach up behind the instrument panel to gently push the panel out towards the steering wheel. It is only pressure-fit with a rubber gasket and no screws. Be VERY careful not to push the panel too far, as the oil pressure line is attached also and you don't want to separate it and have oil lubricating your knees! Just enough space to reach in and unscrew the cable collar from the speedo.
Start from the engine compartment and pull the cable through the firewall grommet. Install the new cable by feeding through the firewall first, then following the route back to the trans. Careful to leave a nice arc so the cable won't bind. Re-install both ends, making sure the square tip is firmly seated and you're good-to-go.
