If you can get a hold of the nut with a pair of vice grips and wiggle it back and forth till the bolt breaks. Possibly use a hack saw blade by itself between the hinge and the toilet. Another thought. If you are careful, you can use a drill and drill out the head of the bolt. Don't put too much pressure on it, if you slip, it could crack the bowl.
