I just found out the hard way that the word "pare" means the same as the word "peel". Apparently, other places in the world use "pare" instead of "peel".

So, I just made a potato recipe and I peeled the potatoes and chopped them into large cubes. I was supposed to just peel it, I think!!

Paring is basically removing the outer layer of a fruit or vegetable, so you simply use a vegetable peeler, and cut the ends off the cucumber. Alternately, you could obviously use a knife, but it's harder to do. Keep in mind that cucumbers have relatively little nutrition, and most of it is, if fact in the peel. So is the fiber.

In a "brine" that usually consists of vinegar, salt, water, but can also contain garlic and if you want your pickles sweet, add sugar. Proportions are kind of depending on your taste. I like mine like Clausen, which is about 50/50 vinegar & water, lots of garlic & heavy on the salt. Small, young, hard cucumbers are best, cause the brine tends to soften them with time. You can reuse the brine for several batches.

Paring down a piece of fruit means to remove the skin, or peal, of said fruit. This is normally done with a small sharp knife called a paring knife. Simple cut off the skin while leaving as much of the fruit intact as you can.
