Satay can be made a few different ways but basically it is chicken strips on skewers, grilled and then dipped in a spicy peanut sauce.
I like to marinate my chicken first in some lime juice and a mix of spices, for a few hours.
Then I thread it onto skewers, like teriyaki, and pat it dry.
Next I make a sauce with peanut butter, yogurt, hot pepper, curry (paste or powder, I make my own sometimes)and thin it with a little lime juice.
Now I grill the skewers of chicken quickly over high heat, so they cook through. I brush each one on both sides with a little peanut sauce and grill another 30 seconds on each side then set them on a dish. I usually serve these with a little heated peanut sauce on the side. There is several variations to this dish, this is only mine.

Satay may have originated in Java or Sumatra or Indonesia.
Satay, is a dish/snack popular throughout not only Malaysia and Thailand, but also Indonesia and Philippines. Because satay originated in Indonesia. Satay, simply means "sate", in Malay language. What satay simply is, is skewers of grilled chicken, pork or beef marinaded and dipped in a sweet sauce. Kind of like "pinchos" from Puerto Rico. Satay is a Malaysian/Indonesian style kabobs. Satay varies all over Southeast Asia. "Indonesian satay" can simply refer to the satay eaten in Indonesia, and there is not much differences between the satay eaten in Malaysia, Thailand or Philippines. Since Malaysia and Indonesia are Muslim countries, they don't use pork for satay in those countries. They only use beef, chicken and seafoods. However since Philippines is a mostly Catholic country, satay from Luzon (Philippines's northern most major island) is made with grilled pork. Satay from Visayas and Mindanao are more closer to the original and real satay from Indonesia or Malaysia. Filipinos are also well known for making fish-satay, skewers with grilled fish or squid. Most satay, uses peanut sauce.
