∙ 11y agoCarrot cake batter will always be thick, and if it has to be spooned into the baking pans rather than poured, this does not necessarily mean it won't make a successful cake. If it won't settle into the pans, though, there are some fixes. The key to making a pourable batter is to add moisture without diluting the mixture.
The only fat called for in most carrot cake recipes is cooking oil, and the amount varies widely from recipe to recipe. Eggs are not an ingredient in many recipes, which means the batter will be thick. Some recipes call for applesauce, which makes the batter a little "looser," and some call for buttermilk, which has the same effect.
If you find the batter is really too stiff to pour, you can start by adding one-half cup of applesauce and mix well. Or, you can add a half-cup of buttermilk. Don't add both. A perfectly good substitute for buttermilk is adding 1/2 teaspoon vinegar to one-half cup of milk. Let it sit for a few minutes until it starts to curdle before adding to the batter.
