Also, the samurai were very respected. Peasants looked up to them greatly.
once you reach a certain level you'll get a specialization point, and you can spend that point on templar, but you have to be a warrior.
Bushido was the general equivalent of a code of ethics and morals for warriors. The Europeans had the Code of Chivalry that most soldiers tried to live up to. Such codes provided a basis for actions and a level of confidence.

Yes you have to unlock them. The samurai is on the Azure Rainforest somewhere and the hexcaster is on the Sandy Barrens level somewhere.
