You can pre-soak beans for 8 hours or so, or overnight. Drain that water off before cooking; this will help remove gas-inducing elements.

You can also drain off excess water after cooking beans (as opposed to using that liquid to make soup).

I was told to put in a chunk of potato when cooking, then discard.... It seems to help but may be just coincidence ? I wondered if anyone else has tried this....

Always simmer beans to cook do not boil as the outside of the bean can overcook before the inside is cooked. Or you can pressure cook beans to save cooking time. Salt does not make beans tough. Acid in the form of wine, vinegar, tomatoes, lemon juice or something similar will make beans tough. So only add acids after cooking.
