You basically throw Pokeballs at Pokemon to collect them, and the more you do that, the more you level up and are able to get better Pokemon and better Pokeballs.
You can also evolve your Pokemon the more you catch the same type, and you can battle at local gyms to take them over for your team. There are hundreds of different kinds of Pokemon, and so collecting is part of it too... trying to get the rarest and most powerful ones, or maybe you prefer the cutest ones, and getting all of them to their highest evolution.
Pokemon GO has a cool aspect to it, unlike other Pokemon games, where you walk around to find rare Pokemon, but also walk around in real life to hatch eggs to get Pokemon as well. It is a good excuse to get people out of the house and playing together on Pokemon hunts.
Just be careful... don't play while driving, and always watch where you are going.
