The copper should fit in the Pex fitting. My mistake, Pex uses the crimp rings. There is a coupling and other fitting that you just push the pipe into and it grabs and seal the pipe. Pex, pvc, copper, all will fit. Just use a coupling between the copper and the pex. I had my doubts the first time I used this, but it does work and doesn't leak. Just make sure that the pipe bottoms out in the connection.

By calling a professional with the proper tools. There are several systems of PEX pipe connections. All require specialized tools to make those connections. The simple answer is a copper by PEX adaptor which every system of pex pipe has to make such transitions.

If using PEX for an addition or a repair, you can join it easily to existing copper piping by compression unions or Sharkbite unions. Sharkbite is easier, but about 2x the price of compression fittings. Once started with PEX it's very easy. You use special brass fittings and simply crimp them to the tube. The traditional crimp tool costs about $150, but there is a cheaper, faster method using Surelok tool and SS crimps.
