There are a number of ways repairs can be made to gouged wooden furniture, but all of them require a lot of practice. One of the oldest and most common to the industry is the use of lacquer sticks.
To perform this sort of repair, you will need a selection of lacquer sticks in different colors but similar to the finish of the furniture you hope to repair and a lacquer burn-in knife (a specially designed tool for the purpose of melting the lacquer sticks). You'll need burn-in cream (used to protect the surrounding finish when making burn-in repairs), a set of very sharp chisels, exacto knives and one sided razor blades, sandpaper in grades from 100 to 500 or finer, a polishing cloth, a felt block for the sandpaper, rotten stone and Dutch or lemon oil to rub the finish when you are done (and a second felt block).
In the event it has not become evident, such repairs are approaching an art form. You would be best served to take the piece of furniture to a professional furniture repairer.
