If you are living in North America, it is not safe to give raw chicken to your cat at all. Chickens are subject to infection with salmonella, and salmonella can transfer to a cat or human.

In Europe, chickens are routinely vaccinated against salmonella, and so there is much less chance of infection. The largest piece of raw chicken to give a cat would be probably abut a half inch (1cm) across by one inch (2cm) long. This assumes, of course, that the cat is an outdoor cat and has experience hunting. If the cat is strictly indoors, and has been primarily fed on 0repared cat food, it is probably better to go with a smaller size -- diced to about a quarter inch (1/2 cm) cubes.
