There are two categories: lossless and lossy. Lossy formats utilize some form of compression and/or psychoacoustics that would compress the parts of an audio file that an average person would not notice. Lossless formats tend to be large in file, but can reproduce the audio quality as close as it can for the original medium (usually analog formats like audio cassettes and/or vinyl records).

You have not specified which formats you want difference between.
But here is the difference between mp3 and wav the most common formats used in audio.

  1. Mp3 is a format for portable devices but Wav was i would say the first audio format with super high quality
  2. You do not loose any quality in audio when working on wav which can range from 20Hz to 20KHz which is a remarkable quality which mp3 cannot give you.
  3. Mp3 actually remove all that sounds those are mostly ignored by human ears and mask too loud sounds. This helps Mp3 to compress the audio to a much smaller size about 1/10th of wav file size which gigantic.
  4. Wav was first used in Windows 3.1 Version and other IBM PC but MP3 came into picture when portable devices came in.Mp3 is more known format today because it is small and a 5 min song can range from 6 to 9 Mb but in Wav a min song will be at least 10 Mb to 16 Mb depending on the quality.

There are many audio file formats.
WAV is the an older format which gives you the quality and higher bit rate. The files of WAV are large but is still preferred to be used as a file for Music Sampling.
MP3 is a new format and don't actually the quality of audio that wav can but you reduce the file size drastically.
You can always read out these formats on Wikipedia to get intense knowledge .
