Yes, for most recipes. If you like the peel on apples, you don't have to, but they can be a problem in a pie or cobbler. Some people saute apples to serve with pork and it you like the peel you can leave it on then.

No you do not peel rhubarb for rhubarb pie but if there are any bad spots on the piece you can peel that little spot off of it then chop the sticks into tiny pieces about a centimetre or two long.

but if it is a really thick piece make sure that you cut it maximum one centimetre long.

and also i was taught that you should cut it on a diagonal, i dont know why but it is easyier to cut the piece and gives you more chucks of rhubarb!

A couple tips for you:

1. mix in the sugar really good.

2.instead of making a pastry top make a crumble or crisp( it way easier and way better)
