yes they do, enzymes are proteins that have catalytic power due to a certain arrangement of amino acids that knows how to recognize another and hydrolyse it. That is some of the reasonninng behind why chymotrypsin is produced as a zymogen because in theory (however its folding prevents it from self-catalysis) it could litterally digest itself!

Proteins are formed when connecting amino acids to each other with a peptide bond. At fist, it forms polypeptides that doesn't have any structure known as primary structure. this polypeptide then mature in to stable and active proteins by maturing in the ER and Golgi bodies where it gets properly folded.
