Wool belongs to a group of proteins (chemicals!) known as keratins. Unlike cotton and the majority of synthetic fibres, wool does not have a homogenous structure. Wool fibres have highly complex physical and chemical compositions.
Cotton wool is cotton fibers, and cotton fibers are mostly cellulose with some other materials in it. In that light, cotton doesn't have a chemical formula. But we know that cellulose is a chain of C6H10O5 molecules, and we write C6H10O5)m for the chain. Lignin, which is a complex mixture of a number of chemical compounds, and some other substances will be found in cotton as well.

Steel wool is made from an iron alloy, not a chemical compound with a formula.
