Depends what you are doing with it, olive oil works great at making salad dressing, sauteing, frying eggs, and making some sauces. I have read that olive oil is not a good oil to deep fry with.

Yes, you can substitute olive oil for vegetable oil, but not for all dishes. Olive oil has a strong taste. You would probably not want to use olive oil in most Indian cooking and definitely not in baking. Make sure that the taste of olive oil is compatible with your other ingredients.

You can substitute vegetable oil for olive oil.

With veg oil, you won't get the desired taste you may be looking for such as salad dressing or garlic and peppers with bread.

Also veg. oil will break down much faster if using it for frying. Olive oil will heat at a higher temp without burning.

Yes, olive oil is seldom used in baking, except for Italian lard breads and such. Olive oil is best used to sautée vegetables, where its distinctive taste is a welcome addition. Extra Virgin Olive oil is often used for vinaigrette and for dipping; it has a pronounced olive taste. Vegetable oils have a higher smoke point than olive oils, making them more suitable for frying and other high-temperature applications. Vegetable oils also have a neutral taste, making them well-suited for baking a wide range of breads, cakes, and cookies.

So unless you want the taste of olive oil, you may freely substitute vegetable oil.

yes it wont make a difference

................................

There will be a difference in flavor. Olive oil has a distinctive olive flavor, mild to strong depending on the grade of oil, which will be noticeable in the finished dish. Vegetable oil typically is neutral in flavor.
