It is possible to roast an avocado seed but I would not recommend it. You can slice the nut up and place it in the oven on low heat for 5-10 minutes but even then the bitterness of the nut does not go away and keeping the nuts in the oven for any longer than 10-15 will unfortunately result in burnt nuts.

Yes, you can slice and roast an avocado seed (pit), but, due to its bitter taste, the seed should then be ground and added to other foods, such as smoothies, to disguise the taste. Sliced, roasted, ground avocado seeds are used as a remedy for diarrhea and dysentery.

Avocados do not have seeds. They have a pit. The pit is not edible.
