A Punnett Square is the best option to use on crossing colors. The Alleles would be BB for Pure Dominant Black while bb is for Pure Recessive White. Bb would be a Black cow carrying a White allele.
A test cross for cattle is a very slow and pretty-much-impossible process, much slower than if you were breeding mice or flies or rabbits or even cats together to see what coat colours you'd get. Reason being is that cows don't and can't calve out litters: they only bear one single calf per year. Plus, if you were breeding a mixed-bred cow of who-knows-what breeds and how many to a purebred bull, you'd have to ship out an old worn-out mutt cow to the slaughter house before you'd find out ALL of the coat colour variations of that cross. Cows only live up to ~20 years of age; in that time they'd've only produced about 19 calves, give or take one or two. In order to produce a test cross to see how many coat colour variations you'd get out of a mutt cow, you're gonna be looking at an unfinished experiment, my friend.

To get a result, his positive control should be the Hereford bull he is breeding this cow to, in order to expect to get a calf that looks similar to a Hereford, since he guesses that the cow has more Hereford in her than the other breeds of her ancestry. So the following offspring is:
1/16 Simmental
1/16 Shorthorn
1/16 Limousin
1/8 Angus
3/4 Hereford
So since the offspring is 3/4 Hereford, he/she will probably have the Hereford markings that was tested for in your (or the farmer's) experiment.
